Chef Eden’s Shiro

Shiro (Eritrean creamy chickpeas) are a staple of Eritrean cuisine. Chef Eden shares her recipe with us so we can all make a little bit of Makina cafe at home.

Ingredients:

1/2 tomato diced (blended)

1/2 onion diced

2 tablespoon garlic/ginger paste

1/3 cup oil 

1 cup Shiro powder 

1 Jalapeno seeded and sliced into 4 

2 1/2 cups of water (hot water)

Salt to taste

Instructions:

Add onions and 1/4 cup of oil in a medium cooking pot, bringing to a simmer on medium high heat. 

Add ginger/garlic, and tomato.  Cook until both onion and tomato are soft (4-5 mins)

Add Shiro powder and the remaining oil.

Keep mixing for about 1 minute and slowly add 1 cup of water

Keep stirring to break down any Shiro powder

Add the remaining  water.  Keep stirring until it is a thick liquid  

Add Salt

Reduce heat cover lid and let it cook for 12-15 mins

Keep stirring every 3 mins

Turn off the heat and add jalapeno to the desired spice level. Keep the lid covered until ready to eat.

Serve with Injera (sourdough flatbread) or rice.
